One of the benefits of eating lunch is that it can help to regulate your blood sugar levels. When you skip meals or go too long without eating, your blood sugar levels can drop, leading to feelings of fatigue and irritability. Eating a healthy and balanced lunch can help to keep your blood sugar levels stable, providing sustained energy throughout the day.

In addition to the physical benefits, eating lunch can also have mental health benefits. Taking the time to sit down and eat a nourishing meal can help to reduce stress and improve focus and productivity. It can also provide a much-needed break from work or other activities, allowing you to recharge and refocus.

So, with all of these benefits in mind, here is a clean eating recipe for a tasty and nourishing lunch:

Quinoa and Black Bean Salad

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh cilantro
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions:

  1. Rinse the quinoa in a fine mesh strainer and add it to a pot with the water. Bring to a boil, then reduce the heat to low and simmer, covered, for 15-20 minutes or until the quinoa is tender and the water has been absorbed. Fluff the quinoa with a fork and set aside to cool.
  2. In a large bowl, combine the cooled quinoa, black beans, cherry tomatoes, cucumber, red onion, and cilantro.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper. Pour the dressing over the quinoa mixture and toss to combine.
  4. Serve the salad chilled or at room temperature. Enjoy!
